Pumpkin French Toast

When fall comes around, the taste of pumpkin something starts sounding really good. Especially when it's something this simple and a great comfort food on a chilly fall day. In our case, sometimes a fall snowy morning.

This French toast is super simple to make and always hits the spot when eating it with a nice cup of coffee. But you need to stock up on ingredients when serving it at family gatherings because it's such a big hit that they tend to ask for seconds, even thirds.

INGREDIENTS:

  • Texas Toast (or other white bread)
  • 3/4 Cup Milk
  • 1/2 Pumpkin Puree
  • 4 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1/4 Ground Ginger
  • 1/4 Ground Nutmeg
  • (Optional) Powder Suger
  • (Optional) Syrup
  • (Optional) Whip Cream

DIRECTIONS:
If using a non-stick skillet, preheat stove at medium heat or at 350 degrees using an electric griddle.

In mixing bowl, whisk together milk, pumpkin puree, eggs, vanilla extract, cinnamon, ginger and nutmeg until well combined. You could keep mixer in bowl or you can pour into a shallow dish to dip more bread.

Butter skillet/griddle and dip the bread into egg mixture. Depending on how moist you want it, allow a few seconds for it to absorb mixture then rotate it to opposite side. Place on skillet/griddle and cook until golden brown on both sides. Butter skillet/griddle again when flipping it over before cooking the other side.

Serve warm with butter, maple syrup and powder sugar.
